The ultimate party food, quesadillas are getting a KCA makeover! These gooey cheesy quesadillas, jam-packed with broccoli are sure to satisfy your craving for a delicious snack. Don't forget the creamy avocado dip—the perfect complement to this finger food!

- 1 Small Head Broccoli
- 1 Cup Shredded Part-Skim Mozzarella
- 1 Ripe Avocado
- 1/4 Onion
- 1 Teaspoon Lemon Juice
- 1/2 Teaspoon Cayenne Pepper (optional if you like spicy!)
- 2 Corn Tortillas
Place broccoli in a food processor and process until finely chopped. Place broccoli aside in a bowl. Finely chop onion in the food processor. Mash avocado in a separate bowl and mix in lemon juice, minced onion, and cayenne pepper. Warm a tortilla in a small skillet over low heat. Scoop enough broccoli in the tortilla to cover half the tortilla, and top with lots of cheese. Fold the tortilla over to form a half-moon and flip the tortilla over to let the cheese melt. After about one minute, remove from heat and repeat with the other tortilla. Once both quesadillas are cooked, cut into 4 even slices and serve with avocado dip! Don't forget to clean up with Bounty® paper towel!
